This elegant wine is made from the oldest Georgian red grape variety Saperavi. The grapes are grown in the village of Shalauri in the Telavi region of Kakheti. The vineyard is located at 550 meters above sea level.
The wine is produced using a traditional Kakheti method, in a Qvevri, fermented with grape skins, ripe stems, and natural yeast. Afterwards, it is aged in oak barrique for 8 months and bottled without filtration.
The wine boasts a dark ruby color. It reveals an intense, fruity, and spicy nose, starting with blackberries and ripe cherries, transitioning to aromatic tobacco. The initial palate exhibits sweet cherry, prune, and chocolate aromas. The mid-palate is broad, rich, and smooth, highlighting again ripe black fruit flavors. The finish is long and spicy, with grilled red bell pepper, mature grape, and oak tannins.
This wine pairs perfectly with lamb, steak, other red meats, and hard cheeses.
For the best tasting experience, it is recommended to decant the wine 30 minutes before serving.
