The Shalauri Mtsvane is made from the eponymous grape Kakhuri Mtsvane in the village of Shalauri, Kakheti. The name is quite simple, but the wine is anything but.
The wine is produced using the traditional Qvevri method (which means that the fermentation of the grapes takes place for a period of 6 months in a Qvevri without the addition of yeast), and due to the prolonged skin contact, it acquires a beautiful amber color.
This wine is bottled without filtration.

The wine itself is an elegant wine with aromas of honey, nuts, and fruit, which blend with almonds and dried fruits. The taste is pleasant, harmonious, elegant, and lasting, thanks to a well-balanced finish. This beautiful Shalauri Mtsvane is perfect to pair with fish, chicken, or a good salty cheese. To mask the tannins of the wine, it is good to combine it with salty or bitter foods.
In Japan, white Qvevri wines (also called amber wines) have also been discovered as a perfect pairing with sushi. The tannins go well with the salty soy sauce, while the other aromas pair nicely with fish.
