The Orgo Saperavi is a dry red wine made from the Saperavi grape of the same name. These grapes are grown on over 50-year-old vines that have always been owned by the Dakishvili family business. One of Georgia’s best winemakers, Giorgi Dakishvili, started this project together with his son Temur: wines that have fermented in the Qvevri (traditional method) and matured in oak barrels or qvevris (modern European method).
After manual harvesting of the grapes, and transporting them in small boxes, they are sorted by hand. Only the best quality grapes are used for this wine.
This elegant wine offers all the power of the Saperavi grape and reveals strong flavors such as cherries, blackcurrants, and prunes in the mouth. At the finish, there are aromas of chocolate and spices to discover.
This exceptional wine can be enjoyed immediately, but it is also ideal for long-term aging. The wine will then become softer, and the aromas will be even more prominent.
The wine pairs well with dishes that have a strong flavor. But it can also be enjoyed on its own as it is an interesting and complex wine. When combined, you can think of lamb, roast sausage, or a stew.
