The cellar where I Muri Sangiovese is produced is located in Sava, a town in Salento, the heart of olive oil and Primitivo di Manduria grape production. This area is considered a “living museum” of regional and national viticulture due to the presence of extensive hundred-year-old bush vineyards that produce excellent grapes. The region enjoys a delightful climate with intense sunlight, relatively dry conditions, and a breeze coming from two seas. This is ideal for the good development of intense tannins and flavors; a constant presence of ventilation, which is an essential element for the quality, health, and ripeness of the grapes. These are the ingredients for making extraordinary Mediterranean wines. This wine is produced in Canosa di Puglia, Barletta, and other municipalities in the region. The grapes for this Sangiovese are grown in the northern part of Puglia, around Canosa di Puglia. The vines are planted southeast on clay-limestone soils. The sea breeze from the Adriatic Sea allows for delicate flavors in the grapes and a fresh and persistent mouthfeel. After harvest, the grapes are destemmed and crushed before undergoing an initial cold maceration of two days. Maceration and fermentation then proceed for 9-11 days at 22-24°C. Between 10 and 20% of the wine is aged in oak, with the rest in stainless steel.
Bright ruby red, with intense and persistent aromas, fruity (strawberry and black cherry) with hints of wood. Medium-bodied, tannic, and well-balanced.
Excellent with all traditional Italian dishes, cold cuts, and baked fish. Excellent as an aperitif.
