About the Wine
The 2021 vintage of our ETHNO Saperavi comes from Khashmi in the Kakheti region of Eastern Georgia. This dry red wine is a blend of 70% Saperavi and 30% Budeshuri, fermented with indigenous yeasts from our vineyard. The vines grow on gently sloping hills at 770 meters above sea level, in brown carbonate-rich soils with thick, heavy, and light clay. This unique soil structure contributes to the characteristic qualities of the wine. Fermentation takes place in traditional Kvevri vessels. The wine remains on the skins for two weeks and undergoes a continuous malolactic fermentation.
Flavor Profile
ETHNO Saperavi presents a deep ruby color with lively purple hues. The aroma offers a complex bouquet of ripe dark berries, cherries, and subtle floral notes. These are intertwined with earthy minerals and spices. The taste is full and balanced, with firm tannins and a refreshing acidity. Flavors of blackcurrant, blackberry, and a hint of dark chocolate emerge. The wine ages for six months in Kvevri and then twelve months in stainless steel tanks. This results in a refined and complex finish with long-lasting notes of dried fruit and a touch of smoke.

This harmonious blend pairs perfectly with a variety of savory dishes. The rich structure and flavor profile of the wine make an ideal complement to grilled meats, such as lamb chops and steak. It also pairs well with stews. For vegetarians, mushroom risotto or roasted eggplant are excellent choices. The earthy undertones of the wine beautifully match the umami flavors of these dishes. Aged cheeses, especially those with nutty or smoky characteristics, also make a perfect pairing and enhance the complex nuances of ETHNO Saperavi.
