This beautiful Dakishvili Family Selection Kisi wine is made from the eponymous dry white grape, a very ancient variety. The grapes are cultivated in the village of Zhaluri in the Akhmeta region (in Kakheti) on a very old vineyard belonging to the renowned winemaking family Dakishvili (established in 1930).
The wine is produced using a traditional Kakhetian method, which involves fermenting the grapes for a period of 6 months in a Qvevri without the addition of yeast. Due to this method, the wine cannot be classified as a typical white wine; its color is more amber. The wine is bottled unfiltered.
This Dakishvili Family Selection Kisi wine owes its beautiful amber color to the long contact with the skin in the Qvevri. It is a fleshy and elegant wine with aromas of dried apricots and almonds. The taste is pleasant, harmonious, elegant, and lasting, with a well-balanced finish.
This is a wine you absolutely must try, even if your preference is for red wine. This beautiful Dakishvili Family Selection Kisi pairs perfectly with white meat, salty cheese, or goat cheese (salad). To mask the tannins of the wine, it is good to combine it with salty or bitter foods.
In Japan, white Qvevri wines (also known as amber wines) are also recognized as a perfect pairing with sushi. The tannins go well with salty soy sauce, while the other aromas complement fish.
