35% pinot noir, 35% pinot meunier, 30% chardonnay
White fruit on the nose, citrus zest with aromas of brioche and toasted nuts. Freshness is the first perception, after which strength and structure take over.
Manual harvest, grapes 100% from our own vineyards. The fermentation takes place in stainless steel (75%), concrete (20%) and wooden barrels (5%). The still wine is aged for 7 months on the lie, before it goes into the bottle for the second fermentation. 48 months of bottle aging. Bottling without filtration. 40% is reserve wine.
Family business Bonnet-Ponson is located in Chamery, in the west of the Montagne de Reims, and was founded in 1862. In the 1990s, Mr Bonnet married Ms Ponson, two Champagne family businesses merged into one.
Bonnet-Ponson is a “Récoltant Manipulant” which means that all wine is made from its own vineyards. Love for the land and the search for expression in the wines have ensured that Cyril Bonnet, 6th generation winemaker, started working organically since 2013.
