The Corvina, Molinara, and Rondinella grapes form the basis for the production of these great Verona wines, such as Valpolicella, Ripasso, and Amarone, which have achieved great international success. The grapes are hand-harvested and placed in wooden crates. This usually takes place early in the morning or late in the evening to avoid the intense heat that the grapes can endure during the day. The wine matures for 12 months in oak barrels.
The bouquet is rich and complex, with clear notes of cherries and a background of chocolate. The taste is dry, soft, with a full harmonious balance. The finish is long and pleasant.
This wine is delicious with game dishes, red meats, and aged cheeses.
