Tasting Profile of Henri Bardouin Pastis
The pastis is clear golden yellow and turns cloudy white when mixed with water – the classic ‘louche effect’. In the aroma: star anise, Provençal herbs, citrus, spices. The taste is complex and layered: anise as a base, but with spicy depth, floral notes, and a subtle bitterness. The finish is long, dry, and refreshing. Henri Bardouin Pastis has been produced since the 1990s by Distilleries et Domaines de Provence, but the recipe is inspired by centuries-old apothecary blends from Southern France.
