ETHNO Saperavi (Shilda, Kindzmarauli PDO)

The 2021 vintage of our dry red wine is a pure expression of the Saperavi grape. The wine comes from the village of Shilda within the Kindzmarauli Protected Designation of Origin (PDO) in Kakheti, Eastern Georgia. We produce this wine with indigenous yeasts from our vineyard. The vines grow at an altitude of 770 meters above sea level, in soils primarily of alluvial origin. These soils consist of stony clay and sand layers, enriched with black stone slabs from the southern slopes of the Caucasus. These unique characteristics provide a high heat absorption capacity and a distinctive temperature regime. We ferment the wine in traditional Kvevri vessels. The wine remains on the skins for two weeks and undergoes a continuous malolactic fermentation.

The 2021 Saperavi has a deep ruby color with lively purple reflections. The aroma features a bouquet of dark berries, ripe plums, and subtle floral notes. These are intertwined with hints of earthy minerals and spices. The wine is full-bodied with firm tannins and a refreshing acidity. It offers flavors of blackcurrant, blackberry, and a touch of pure chocolate. Due to the extended aging period in Kvevri and stainless steel tanks, the wine gains complexity and depth. The finish is long and elegant, with persistent notes of dried fruit and a hint of smokiness.

This robust Saperavi pairs excellently with many savory dishes. Its bold structure and rich flavor go well with grilled lamb chops, beef stews, and grilled meats. For a vegetarian option, pair this wine with roasted eggplant or a mushroom risotto. The earthy undertones of the wine complement the umami flavors of these dishes. Additionally, aged cheeses, especially those with nutty or smoky characteristics, make an excellent accompaniment. This enhances the nuanced complexity of the wine.
