Eminencia Pedro Ximenez Sherry is a lush and intensely sweet dessert wine from the province of Cádiz in southern Andalusia, Spain. This iconic Pedro Ximenez (PX) is made from late-harvested, sun-ripened grapes that are first dried on mats to concentrate the sugar content – a traditional method that results in a rich and concentrated wine.
Although most sherry is made from the Palomino grape, this Pedro Ximenez Sherry is vinified from 100% PX grapes, which are specifically used to produce exceptionally sweet and aromatic wines. The grapes are harvested late in September, when they have reached their maximum sugar concentration.
Taste Profile
Dark brown and syrupy in the glass. The aroma is intense, with notes of raisins, figs, dates, nuts, mocha, and dark chocolate. On the palate, the wine is lavishly sweet, velvety smooth, and powerful, with hints of caramel, dried fruit, and a subtle bitterness that balances the overall profile.
A unique sweet wine with layers and length – an absolute treat for lovers of rich dessert wines.

Fun Fact
Pedro Ximenez sherry is named after both the grape and the man who, according to legend, brought this grape from Germany to Spain. Thanks to the intense sun in Andalusia and the drying method on esparto grass mats, PX grapes develop an extremely high sugar content – good for a natural sweetness of more than 300 grams of residual sugar per liter. This Eminencia PX is a beautiful example of that centuries-old tradition in liquid form.
