The Biscardo family, together with a number of farmers in Emilia Romagna, created this 100% Sangiovese. The harvest takes place at the end of autumn when the partially dried grapes are hand-picked. These raisins hanging on the vines are collected in baskets after harvest and dried. At the end of December, maceration occurs at low temperatures. Afterwards, the wine is stored on the lees until March. Enigma is produced using the appassimento process.
An intense black color with harmonious aromas of red fruits and blackberries. A fine, well-balanced wine with soft and sweet tannins. 30% of the wine ages in oak barrels.
The wine is so well-made and already delicious on its own. It also pairs well with meat dishes and aged cheeses.
