Fun fact
Morpheus is Alvinne’s own yeast culture, developed for controlled spontaneous fermentation. Thanks to this unique yeast, Omega gains its characteristic soft acidity, without barrel aging or wild Brettanomyces. This makes Omega an ideal starting point for those wanting to explore sour beers, but not immediately dive into extremes.
