This wine is mostly made from Carmenère, supplemented with a small portion of Cabernet Sauvignon and Petit Verdot. The grapes undergo a maceration of 6 days at a temperature of 10°C, followed by fermentation at a temperature of 24-26°C to preserve the fruity aromas. Then, the wine rests on the skins for 15 days to create more volume and density. The wine is then aged for 14-16 months in French and American barrels, and an additional 6 months in the bottle.
This beautiful violet to ruby red Sutil Carmenère offers a promising outlook on the Colchagua Valley. The nose is characterized by notes of ripe red and black fruit, along with a delicate hint of caramel and black pepper. The palate features soft ripe tannins combined with a very pleasant freshness and a wonderfully long finish.
This wine pairs wonderfully with various types of meat, such as beef, lamb, and pork. It also goes very well with vegetables like mushrooms and eggplant, as well as strong yellow cheeses.
