Production Process
The 1682 MCC Pinot Noir is produced from hand-harvested Pinot Noir grapes with a low sugar content (18.5 – 19 °B). After harvest, the grapes are pressed whole to obtain a juice with a delicate pink color and high acidity. This juice undergoes fermentation with a strong yeast strain to form the base wine.
The wine is then bottled and undergoes a second fermentation in the bottle, creating the characteristic bubbles. After this fermentation, the wine ages for at least 10 months on the lees, which results in a refined mousse and a balanced flavor profile.
