Production Process
The 1682 MCC Chardonnay is made exclusively from hand-picked Chardonnay grapes from the best vineyards. After pressing, the juice reflects its purest form, with a high natural acidity and subtle flavor notes.
The wine is fermented and stabilized before undergoing a second fermentation in the bottle. During this re-fermentation, the characteristic fine bubbles develop, thanks to the CO2 produced by the yeast. After the second fermentation, the wine matures for at least 12 months on lees (dead yeast cells), which creates a complex mousse and a rich, refined taste.
