The harvest of the Glera and Pinot Noir grapes is done by hand by Biscardo. To prevent fermentation from occurring, the grapes are transported directly to the cellars in the morning of the harvest. Destemming and pressing are carried out under controlled temperature. The two grape varieties in this blend come together before the fermentation process takes place, in order to preserve the intensity and aromas. Afterwards, the wines are stored in stainless steel tanks.
