Ocho Saperavi Budeshuri is an artisanal red qvevri wine made from the Saperavi Budeshuri grape variety, originating from selected vineyards in the village of Tibaani in Sighnaghi, Kakheti. This variety is a clone of Saperavi with a more aromatic and complex expression.
The wine is vinified according to the ancient Georgian method in buried qvevris, with spontaneous fermentation on the skins for 9 days. No additives are used – no sulfites, no filtration – resulting in a powerful, pure wine full of character.
Tasting Profile of Ocho Saperavi Budeshuri
The wine has a deep, dark cherry color. On the nose, you can smell blackcurrant, blackberry, pepper, dried herbs, and a hint of leather.
On the palate, the wine is dry, full-bodied, and robust, with firm tannins, fresh acidity, and a long, spicy finish. The structure is pronounced and calls for hearty dishes or a moment of contemplation.
