Production Process
The Cuvée Clive is made from a blend of carefully selected Chardonnay and Pinot Noir grapes. The vineyards are located on limestone-rich soils opposite the wine cellars of Graham Beck in Robertson. These limestone soils contribute to the complex aromas and the high quality level of the wine.
After an early manual harvest in January, the grapes are pressed whole. Only the first juice, known as the “cuvée juice,” is used. This juice rests for 24 hours before fermentation begins in stainless steel tanks at 15°C. After 16 days of fermentation, the wine is not blended but bottled directly. Here, the wine undergoes a second fermentation and ages on its lees for 60 months, resulting in a powerful mousse and refinement.
