In the area of Ortona, Abruzzo, a vineyard with Pecorino is a quite rare sight, with only about 300 hectares planted in the regions of Abruzzo and Le Marche. The name ‘Pecorino’ is derived from the fact that it was traditionally believed that a bunch of Pecorino grapes had the same shape as a sheep’s head. The vineyards are located around the town of Ortona, on the Adriatic coast in the Abruzzo region. To the west and southwest, vines are planted on calcareous clay soils and trained along a pergola. After harvest, the grapes are crushed and destemmed, then pressed. The cooling process occurs in seconds down to -1°C in an inert atmosphere. Subsequently, the must undergoes static clarification and fermentation at 12°C to extract as much aroma as possible. 80% of the juice is fermented in stainless steel tanks, and the remaining 20% in 40-hectoliter oak barrels.
Pale yellow color with greenish highlights. Aromas of white flesh fruits, especially pears, and balsamic notes that reveal the good quality of the wood.
Perfect with lobster, bound soups, smoked fish, and roasted chicken.
