This tasting beer is a modern interpretation of the classic Flemish old brown, but with a distinctive twist. The beer is fermented with the house yeast Morpheus and carefully matured in stainless steel tanks, without wood or wild fermentation. The result is an intense combination of sweet and sour, complex but perfectly balanced.
Flavor Profile of Alvinne Sigma
Sigma pours a deep chestnut brown with a firm foam head. In the aroma, you find notes of dried dark fruit, balsamic, light wood tones, and malt sweetness. The taste is characterized mainly by rich acidity and soft residual sweetness, giving the beer a viscous yet refreshing structure. You taste plums, figs, caramel, and a tang from yogurt or cherry pits, finished with a long, slightly sticky aftertaste.
