This vintage of the Mtsvane-Rkatsiteli is made from grapes from a very old vineyard in Manavi AOC at an altitude of 580 meters.
The Mtsvane-Rkatsiteli was fermented in stainless steel tanks. Because the white grapes do not contain so many anthocyanins, they tend to oxidize faster. For this reason, the winemakers have taken more tannins from the white grapes by macerating the wine on hides and stalks for 2 weeks. The wine is then also placed on the lees for a period of two months, resulting in aromas of baked goods / yeasts. After the maceration, the wine is still matured in a stainless steel tank. No yeasts were added for the malolactic fermentation.
